Apple Cinnamon Brown Betty
Last month, the fun people at Land O’Lakes invited several bloggers to create recipes for their new product, Land O’Lakes All Natural Cinnamon Sugar Butter Spread. I was so excited because I am in love with anything cinnamon sugar flavored. One of my morning rituals is to have coffee and cinnamon sugar toast, with butter of course. In fact, I have been so addicted to cinnamon sugar toast, I have had to make an effort to try and not eat it as much, and change up my morning routine.
When I first found out about the new Land O’Lakes All Natural Cinnamon Sugar Butter Spread, all I could think about was cinnamon sugar toast. I couldn’t get it out of my mind, and then I thought the only thing that’s better than cinnamon toast is apple pie. So the next logical step for me with a big tub of Cinnamon Sugar Butter Spread in hand was to make an apple brown betty.
An apple brown betty has all the wonderful flavors of apple pie, without all the work. There are some elaborate recipes out there, but the essence of a brown betty is simplicity. A brown betty is about using ingredients you already have on hand. It’s the dessert to make when your pantry and fridge items are running low.
I wanted to make this recipe as easy as possible. I only included 4 ingredients, apples, which we always have on hand, leftover bread, a touch of lemon zest to brighten things up, and Land O’Lakes All Natural Cinnamon Sugar Butter Spread. That’s it. You can use any type of leftover bread for this recipe. I used a day old loaf of seedy Italian bread. For the apples, any type of sweet crisp apple will do. I used Jazz Apples, but Fuji, Braburn or Gala would also work.
It’s a snap to put together too. In just under 15 minutes, it will be ready for the oven.
First I started with my Land O’Lakes All Natural Cinnamon Sugar Butter Spread, bread and apples.
Oh, and don’t forget the lemon.
Next you just peel, core and cut up your apples and add them to a mixing bowl with 1/4 cup Land O’Lakes All Natural Cinnamon Sugar Butter Spread.
Then you mix it all up with your hands, and repeat the same thing with your chopped bread, and you’ll have two mixing bowls, each filled with Land O’Lakes All Natural Cinnamon Sugar Butter Spread covered bread and apples.
Then you pour your bowl of apples in a pie dish like this.
And top with the bread crumbs. Don’t forget to also cover tightly with aluminum foil before baking.
Bake for about 40 minutes, then remove foil and bake for an additional 15 minutes to crisp bread. Your whole home will be filled with the flavor of sweet homemade apple pie, without all the work. This brown betty is best served warm. And don’t forget the ice cream.
Apple Cinnamon Brown Betty
3 1/2 cups bread, cubed
3 large apples , peeled, cored and sliced ( a sweet and firm variety will work best. I used Jazz Apples, but Fuji, Braburn or Gala would also work)
1/2 cup, divided, Land O'Lakes All Natural Cinnamon Sugar Butter Spread
the zest of 1 lemon
Preheat oven to 375 degrees. Place apple slices, the zest of 1 lemon and 1/4 cup Land O'Lakes All Natural Cinnamon Sugar Butter Spread in a large bowl. Mix well until apples are completely covered.
Place bread crumbs and 1/4 cup Land O'Lakes All Natural Cinnamon Sugar Butter Spread in another large bowl and mix well until all bread and butter are well incorporated.
Place apple mixture in a pie plate. Top with bread mixture. Cover tightly with aluminum foil.
Bake for 40 minutes covered. Remove foil and bake for approximately 15 more minutes, or until bread is browned.
Serve warm topped with vanilla ice cream.
