Avocado Shrimp Tacos

I wasn’t introduced to avocados to later in life. I felt so deprived that I hadn’t experienced them as a kid because I instantly fell in love with them.  I wanted to make sure my son got to enjoy them as soon as he could.

So when I started introducing him to solids when he was a baby, I started with pureed avocados. He loved them. For a while it was all the baby food he would eat. I kept feeding him avocados in different dishes as he got older, and he still loves them.

Avocados are so healthy for babies, toddlers and bigger kids.  Did you know that just 3 slices of this creamy green fruit (I had no idea until recently they are actually fruits) packs potassium, fiber, folate, vitamin C, E and those B-complex vitamins that support memory and brain function. I try to find all kinds of different ways to incorporate healthy avocados in our diet. I use them in place of mayo on sandwiches and in lots of different salads.

In celebration of the wonderful and nutritious avocado, Avocados from Mexico is hosting a Mini Chef Video Contest for parents of children ages 5-15 starting November 14th. To enter simply record a 1-3 minute video of your child or children preparing their favorite avocado dish.  Be sure to have them include why they love avocados and the catchy Avocados from Mexico jingle found on their website here. Videos will be judged on your Mini Chef’s personality and the presence of avocado.

One grand prize winner will receive $1,000 in cash plus an HD Camcorder, a Nintendo 3D, 2 games and a personalized Mini Chef jacket. Get your video in by the deadline on December 4th. Then be sure and check back on December 6th to see if your video is one of 10 finalists. Public voting will take place on YouTube December 6-11. The video with the most Likes wins and will be posted on the website December 12th.

My son just turned 4, so he’s not quite old enough for the contest. He and I made these fun tacos today that take just 6 ingredients. I cut up the avocados and other vegetables, warmed the tortillas, and he added everything to the bowl, mixed it, and put it in the tortilla. They were so easy and delicious.

Avocado Shrimp Tacos

Ingredients:

1 lb pre-cooked jumbo shrimp, thawed
4 avocados, chopped
1 medium tomato, chopped
1/4 cup diced red onion
the juice of 1 lime
flour tortillas

Directions:

Add all ingredients except tortillas to a large bowl. Mix well.

Warm tortilla and add shrimp and avocado mixture to tortilla

Makes 4 large tacos.
