The holiday season seems to be in full swing with our family. We already have a good part of the Christmas shopping completed. The tree and house are also decorated, and my son’s school’s Christmas program was this week. I’ve even managed to start on some holiday baking.

The gift we’re giving each other on the home improvement front this year is a pool remodel. We’re not doing anything fancy with waterfalls or anything, just something pretty simple. You could actually just call it necessary repairs because we had a fiberglass and gel coated pool that the gel coat had started to breakdown on. The fiberglass was shedding and every time you sat on the steps or rubbed up against the pool’s walls you got full of itchy fiberglass.

The pool and deck should be done by the begining of January. We planned to do it over the winter so we wouldn’t want to swim in it. But I have to say that you want to swim the most when your pool’s empty.

Because we’ve been so busy getting this pool done, and with the holidays, it doesn’t seem like we’ve had any extra time at all. And to op it off I’ve been incredibly hungry. I think I’ve been so busy that I’m actually forgetting to eat. Which isn’t a bad thing since I still have some baby weight to lose.

I have been taking the time though to make a good breakfast every morning, as hectic as life gets. That we if we get too busy and skip a meal or don’t have time to eat anything but a small snack, at least we’ve had a good breakfast. And because I always have  Thomas’ Bagels on hand, I’ve found some pretty creative recipes that I can make with them.

This bacon and bagel strata is one of my family’s new favorite breakfast treats. This is such a quick and easy recipe, you can easily make it during the week too. And making it in individual ramekins like I’ve done here makes it easy to serve to guests when entertaining overnight guests or for Sunday brunch.

Yield: Serves 6

Bagel and Bacon Strata

   Total Time:   40 minutes

Ingredients:

  • 8 eggs, whisked
  • 4 Thomas Everything, Whole Wheat or Plain bagels, chopped
  • ½ cup red chopped bell peppers
  • ½ cup green chopped bell peppers
  • ½ cup chopped cooked crisp bacon
  • ½ cup milk
  • ¼ cup diced green onion
  • Salt and pepper to taste

Directions:

Heat oven to 450°. Combine all ingredients in a large bowl and mix well. Divide mixture evenly among 6 ramekins.

Place ramekins on cookie sheet an place in oven. Bake until strata has puffed and has browned, about 15 – 20 minutes.
