BBQ Chicken Pizza
I hope you all had a wonderful Christmas. We had a nice, uneventful, Christmas day just playing with my son. For the past several years, to help manage our holiday stress, we’re reserved Christmas just for us. It’s creates an intimate, nice way for me and my husband to enjoy our son and our own traditions. Next week, we’re off to visit family, and then take our winter vacation with my brother and sister-in law. I’m so excited, I can’t wait!
But today, it’s Friday night pizza time! I’ve got another easy recipe for you today using Pillsbury pizza crust. Pillsbury ready made pizza crusts are a great way to save time when making your own pizzas, especially during this time of the year. I know I’ve got so many things on my to do list for this weekend, it’s not even funny!
This pizza starts with Pillsbury’s thin crust pizza dough, then BBQ sauce, sliced pre-cooked chicken and a combination of Gouda, Swiss and Mozzarella cheese. This cheese blend pairs wonderfully with the BBQ sauce. Then I added a few bell peppers and onion slices.
After it comes out of the oven, I top it with a little freshly chopped cilantro.

BBQ Chicken Pizza
Ingredients:
1 can (13.8 oz) Pillsbury® refrigerated thin pizza crust
1/2 cup BBQ sauce (from bottled, I used Sweet Baby Rays original)
1 lb cooked and sliced chicken (I browned mine in a skillet with a little olive oil, salt and pepper)
2/3 cup shredded gouda cheese
2/3 cup shredded mozzarella
2/3 cup swiss cheese
1/2 cup sliced red and green bell peppers
1/4 cup sliced onion
2 tablespoons freshly chopped cilantroDirections:
Heat oven to 400°. Roll dough out onto cookie sheet and press until desired thickness. Pre-bake dough for 10 - 15 minutes, or until light golden brown. Remove from the oven. Spread BBQ sauce on top of dough and then top with chopped chicken, onions and red and green peppers and shredded cheese.
Bake pizza for 18 – 20 minutes, or until golden brown around edges. Garnish with fresh chopped cilantro before serving.

recipe sounds delicious.. though I may need to adapt it some since I can only eat a wheatfree pizzacrust version. hopefully it will taste just as yummy
