BBQ Ranch Chopped Salad

I’m so excited for Christmas this year. Our daughter is just old enough to really enjoy the presents this year, and I can’t wait to see her face on Christmas morning. My son is getting older and harder and harder to shop for. He’s more into video games and electronics now, which is great, but it’d hard for me to enjoy those things with him. I’d rather ride bikes, play basketball or go swimming. So hopefully we can think of another new and exciting toy that can get him outside in the fresh air and more active!

Speaking of being more active, we’re already trying to move more to help offset all those extra cookie calories. I’m also making lots more healthy salads as lunches and light dinners. I love making a huge salad with some simple grilled chicken for dinner. It’s super healthy, filling and perfect for days when you’ve been stuffing your face with Christmas cookies.

This salad is hands down my very favorite of all salads. I could eat this morning noon and night. It’s so good. This salad is actually my homemade version of a pre-prepared bagged salad that I use to get all the time. I finally decided not to keep spending all that money on prepared salad, and developed my  own recipe that tastes even better!

This salad is loaded with lots of healthy greens – kale, savoy cabbage, romaine and red cabbage. I also add crispy carrots and green onions. You can add other veggies too like radishes, cucumber or bell peppers too.

For the dressing I just mix ranch and BBQ sauce. It’s that easy, and it tastes better than just about anything. Then top with some corn chips or tortilla strip salad toppers like I’ve done here. It’s so easy!

BBQ Ranch Chopped Salad

Ingredients:

1 cup chopped Savoy Cabbage

2 cups chopped Kale

2 cups chopped Romaine Lettuce

1/2 cup chopped Red Cabbage

1/4 cup matchstick carrots

3 Green Onions, sliced

1/4 cup Tessemae’s Ranch Dressing

1/4 cup BBQ sauce

1/4 cup tortilla strips salad toppers or corn chips

Directions:

Combine chopped greens, carrots and onions in a large bowl. Combine ranch and bbq sauce in a separate small bowl. Mix well to combine. Pour over salad and toss well. Top with tortilla chips or corn chips. Serve and enjoy!
