Chicken Fried Tacos

Of all the types of recipes I get asked for, like sugar free, gluten free and low fat, the most asked for recipes are those that are salt-free or very low sodium. And although I do absolutely love salt, so much that I made it my logo, I understand that too much of a good thing can be bad for us.

With that said, I am beyond excited to be partnering with one of my favorite brands, Mrs. Dash, a company devoted to making great tasting salt-free spices. And now in addition to their basic seasoning blends that you can add to meat and veggies, they have a line of seasoning packets so you can make all those dishes you love, but without the salt!

The new seasoning mixes come in Taco, Chili, Beef Stew, Fajita, Meatloaf, Pot Roast and Sloppy Joe. There’s also a few new salt-free dip mixes including classic ranch, Garden Vegetable and French Onion.  I love these seasoning mix packets because thy are the only all-natural, salt-free, and no MSG. These packets also make quick, easy meal solutions perfect for family meals.

So when Mrs. Dash sent me all the new flavors to try, the first one we went for was the taco seasoning mix. I made it into my favorite basic ground beef tacos, and they tasted amazing! I couldn’t wait to try the seasoning mix with a some more authentic fried tacos.

For these tacos, I started out with some boneless skinless chicken breasts that I poached, shredded and simmered in the Taco Seasoning mix. To make the tacos, I stuffed the soft corn tortillas with chicken and then fried then until crunchy in hot oil. This makes the tastiest, most wonderful crunchy taco ever. You’ll forget all about those store-bought crunchy shells after you taste these guys.

After they’re cooked, I garnish the tacos with lettuce, tomato, onion and cilantro. Then I top with some sour cream and guacamole.

Yield: 12 tacos

Chicken Fried Tacos

Ingredients:

2 lbs boneless, skinless chicken breasts
1 packet Mrs. Dash Taco Seasoning Mix
1/2 cup shredded cheese
2 cups shredded lettuce
1 cup chopped tomatoes
1/4 cup chopped onion
1/4 cup roughly chopped cilantro
1/2 cup sour cream
1/2 cup guacamole
12 corn tortillas
vegetable oil for frying

Directions:

Add chicken breasts to a medium saucepan. Add water to cover. Bring to a boil and reduce to medium heat. Boil until chicken is done and tender.

After chicken is done, remove from cooking liquid and use two forks to shred. Discard liquid and add chicken back to saucepan. Add seasoning mix along with 1/4 cup water to pan. Bring to a boil and reduce to a simmer. Simmer until sauce thickens.

Heat oil over medium high heat in a deep saucepan. Stuff tortillas with shredded chicken, make a taco and add back to hot oil. Fry on both sides until crunchy.

Drain on paper towels when done. Top with cheese, lettuce, tomatoes, onion and cilantro.

Garnish with sour cream, guacamole and salsa.
