I really like to prepare ahead of time when we’re having family get-togethers to watch the big game. One of my other favorite things to do is pre-prepare mouthwatering marinades for the meats we’ll be cooking on the grill.

This mouthwatering marinade is one of my family’s favorites. It’s a little sweet for the lime and a little spicy from the chili. Everyone always loves this recipe, and I love sharing it because it’s so incredibly easy!

I start by adding cut up chicken to a large gallon bag, and then adding the ingredients for the marinade. This recipe just calls for lime juice, olive oil, fresh cilantro, chili powder and salt and pepper. After adding the marinade ingredients to the bag, just seal the bag and mix well.

Then place the marinating chicken in the fridge for 3 – 4 hours. You can also do overnight.

Next heat up your grill with Kingsford® Charcoal. Then cook your chicken over medium heat until done. Kingsford® Charcoal adds another layer of flavor that just can’t be beat. It’s the best way to grill!

We like to eat this chicken just with a simple salad or maybe some potato salad, but you can also make a sandwich out of it too! It’s so good. I hope your family enjoys it as much as we do!

Ingredients:

  • 2 lbs chicken breasts, cut in small portions
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 lime, sliced
  • 2 tablespoons freshly chopped cilantro
  • 1 teaspoon chili powder (you can add more or less depending on how hot you like it!)
  • 1 teaspoon salt
  • 1 teaspoon pepper

Directions:

Add chicken and all ingredients for marinade to a gallon storage bag. Mix well and refrigerate for 3 - 4 hours, or overnight.

Heat grill to medium heat with Kingsford® Charcoal. Place chicken on hot grill and grill over medium heat, flipping once, about 15 minutes

Cooking time will vary based on the exact size and and weight of chicken. Make sure to cook until internal temperature is 165°, or until all juices run clear.
