Cocoa Brownies with Browned Butter

Even though the holidays have passed, my family and I are still baking sweet treats. My son came home the other day with an optional math assignment—a brownie recipe. His teacher had the great idea that the kids helping out in the kitchen with measurements would improve their math skills. My son told me about the assignment, but asked if we could make my brownie recipe that he loved so much.

So I pulled out my favorite cocoa brownie recipe, and I decided to change it up a little bit by adding browned butter. Browning butter is my new favorite way to add a dimension of flavor to simple, everyday recipes. I even brown my butter every morning before making scrambled eggs. It really makes a simple scrambled egg so much better.

So to get my son more familiar with fractions, I made him measure all the ingredients, but with only a ½ cup measuring cup. Because most of the ingredients in this recipe are 1 cup, it was pretty easy. When it came time for the ¾ cup flour, we learned how to add ½ plus ¼. It was fun for me, not so much for him.

Because it was a school night, I didn’t want to make a huge mess in the kitchen. So I made sure to spray our baking dish with PAM Cooking Spray. This made sure that the brownies didn’t stick and that cleanup would be quick and easy. With a busy little baby that’s crawling everywhere and into everything now, I don’t have much time for anything. She’s either fussy and needs attention or she’s quiet and I know she’s up to no good.

Cocoa Brownies with Browned Butter Recipe

Ingredients:

  • 1 cup melted brown butter
  • 1 cup white sugar
  • 1 cup brown sugar
  • 4 large eggs
  • 1 cup cocoa powder
  • ¾ cup flour
  • 1 cup chopped walnuts
  • 2 teaspoons vanilla
  • 1 teaspoon salt
  • PAM Cooking Spray

Directions:

Heat oven to 350°. Spray a 9-by-9-inch baking pan with PAM Cooking Spray. Set aside.

Add butter to a medium saucepan and cook over medium heat, stirring often, until butter stops foaming and browned pieces start to form at the bottom of the pan. Remove from heat when done.

Combine melted butter, white sugar and brown sugar in a large bowl. Mix well to combine. Add eggs, one at a time, mixing well in between each addition. Add vanilla and mix well.

Add cocoa powder, flour and salt. Mix well. Fold in walnuts. Spread batter into baking dish. Place brownies in oven and bake for 45 to 50 minutes, or until a toothpick comes out clean when inserted into the middle of the pan of brownies.
