Creamy Dairy Free Mashed Potatoes

Here’s my post today on Babble for Creamy Dairy Free Mashed Potatoes seasoned with garlic and fresh parsley. These are so simple and comforting. I used a new product to me, dairy free sour cream. I couldn’t believe how good they were.

Creamy Dairy Free Mashed Potatoes

Ingredients:

6 medium white potatoes, diced in similarly sized pieces
2 cloves garlic
1 teaspoon kosher salt
1 1/2 cups dairy free sour cream (one small tub)
3 tablespoons freshly chopped parsley
water

Directions:

1. Combine potatoes, garlic, salt and water in a medium saucepan and boil over medium high heat until they are fork tender. Depending on the size of the potato chunks, it should take about 20 minutes. Drain potatoes well.

2. Add them back to the sauce pan and add dairy free sour cream. Mash potatoes to desired consistency.

    Great recipe. I love the green sprinkled on top. Mashed potatoes are hard to photograph, but once again you produced some stunning results. I so admire your skills! Each time I come to visit, I’m blown away by your images. Thanks for sharing with us!

    Dairy free = soymilk? Anyway, these potatoes look amazing, nice photo. Another recipe for my must try them next time list. It’s getting really long :)
