This was the first time I made lamb gyros at home. They are quick, easy and so good.

Ingredients:

2 lbs ground lamb
1 teaspoon dried oregano
1 teaspoon dried marjoram
1 teaspoon dried rosemary
1 medium onion, diced
1 clove garlic
1 1/2 teaspoons kosher salt
1 teaspoon black pepper

Tzatziki Sauce

1 cucumber, diced very fine
2 cups plain yogurt
1 tablespoon finely chopped fresh mint or dill or both
the juice of 1 lemon
4 cloves garlic, grated
salt to taste

Additional ingredients

sliced cucumber
sliced tomatoes
flat bread

Directions:

1. Preheat oven to 325 degrees. Place onion and garlic in food processor. Pulse until fine. Remove and place in paper towels and remove as much water as possible. Place ground lamb and spices in food processor. Pulse until it is ground well.

2. Form into a rectangular shaped loaf and place on baking sheet. Bake at 325 degrees for about one hour, or until internal temperature is 170 degrees. Let meat rest at least 15 minutes before cutting.

3. Place all ingredients for tzatziki sauce in a bowl and mix well. Slice meat thin and place in flat bread with sliced cucumber, tomato, tzatziki sauce, salt and pepper.
