Summer is already halfway over, and we’re planning our first little weekend getaway. This weekend will be a quick trip to Grandma’s house. She can’t wait to get her hands on our little bundle of joy, for lots of snuggles and kisses. Nothing’s better than Grandma’s kisses is it? Except maybe for Grandma’s cookies. Her walnut and chocolate chip cookies are to die for!
Since summer is winding down so fast, I’ve been thinking more and more about what I’ll be making for breakfast when school starts back. We’ve been so lazy this summer and have been sleeping in every day. I forgot how tiring it is to have a newborn in the house. All those late night feedings and diaper changes lead to mama sleeping in, and taking some afternoon naps with the baby too.
Breakfast is so important in our family. We never walk out of the house without enjoying at least a big bowl of cereal and fruit. But bacon and/or eggs is always better. Especially when it’s paired with a big warm bagel. My family’s favorite breakfast item is fresh bagels, but only if it’s Thomas’ Bagels. Most of the time we just smear them in cream cheese, but we also like to make fun breakfast sandwiches with them like this Everything Bagel BLT with Pesto Aioli. Now this sandwich is equally wonderful for breakfast, lunch or dinner. You can eat it alone, or pair it with a simple soup.
For this bagel sandwich, I start with my favorite bagel variety, Everything. They’re my favorite because they’re loaded with all the wonderful seeds love, and work so well in different sandwiches. But feel free to use your favorite bagel. Then I slather on some Pesto Aioli and layer on some crisp bacon and fresh tomato. To top it off, and keep it a little more healthy, I top it with lots of fresh spinach. It’s so incredibly good.
This sandwich is great for the whole family. And if you’re kids aren’t a fan of pesto yet, just use regular mayonnaise. To save calories you can with out the regular bacon for turkey bacon or use Canadian ham. You can make these sandwiches and eat them on the go or pack them for lunch too, they’re so easy and fast.
