French Toast Skewers

This month has been so exciting and busy for our family. We started off by taking a 7-day cruise in the Western Caribbean. It was beautiful, relaxing and so much fun. We took the kids and they had a blast.  At times I wish they could have stayed with Grandma, especially since you can’t leave kids under 2 at Camp Ocean on Carnival, but in the end we wouldn’t have had it any other way. Exploring and experiencing new things with our children fuels us to want to go and explore more.

School also started last week. My son, although only in third grade has started to change classes. He has three teachers in his little private school, and has equal time with each during the school day. He’s been telling me all about what’s happening in school and he’s so excited. He described his first day of school as absolutely wonderful. He’s also taking golf this fall. I’m hoping this might be more suited for him than soccer which we tried last spring, and really wasn’t his thing.

I made sure to prepare for back to school very early in the summer, but it didn’t seem to work because this past week has been so incredibly busy, but in a good way. We got pretty lazy over the summer, so it’s nice to get back into a routine of waking up early with a more scheduled day. I think I’d be able to keep up if it weren’t for the Olympics, but I just can’t miss a minute. We’ve been literally glued to the television just enthralled with every sport. It’s so amazing and exciting to cheer everyone on.

Even though we’ve been super busy, I don’t want to skip out on a healthy breakfast. So before school started I stocked my freezer with some breakfast shortcuts. One of my favorites is Aunt Jemima Homestyle French Toast. It’s a nice change from toaster waffles or pastries. Just pop some french toast in the toaster. Then serve it any way you like.

I love eating lots of fresh fruit in the morning, so I made these fun little French toast skewers. I added strawberries, kiwi and banana slices, but you can add any fruit you like. These make such a fun and healthy breakfast that are perfect for busy mornings. You can even take these to-go in the car. Kids and adults can’t resist food on a stick!

Serve these with a little warm Maple syrup or powdered sugar. Some sweetened cool creamy Dannon yogurt would make the perfect dip for these too.

Yield: Serves 4 (about 8 skewers)

Ingredients:

4 slices Aunt Jemima Homestyle French Toast, from frozen, heated according to package directions and cut in bite-size squares

4 cups assorted fresh fruit (sliced kiwi, strawberries and bananas)

wooden skewers

Maple syrup

Directions:

Assemble fresh fruit and cut up French toast on skewers.

Serve with warm Maple syrup or Dannon yogurt for dipping.
