Fried Egg BLT with Sriracha Aioli

My husband and I have been on a healthier eating for the past couple of months.  The main things we’ve done is to reduce how much we eat out, eliminate sandwiches and pizza for dinner (but not from lunch) and watch portion control. This, combined with quite a bit of cardio, has helped us lose much needed lbs.

I think the main thing that has kept us on track this time is not to eliminate some of our favorite things, like thick cut crispy bacon. So long as treats like this are just a once a week goodie, they haven’t been interfering with our weight loss.

So for Sunday brunch this past weekend, I made these fried egg BLTS. This sandwich was mine, I love a runny egg. The one I made for my husband was a fried egg over hard. He loathes runny eggs, especially when it’s on a sandwich and the egg yolk might run down his arm. He’s such a neat eater.

For the bacon, I used a thick cut bacon, cooked crisp. I also love to use black pepper bacon on BLT’s. It adds so much flavor. But for this sandwich, I wanted the spicy kick to come from the mayo, so I added a Sriracha Aioli.

The Sriracha Aioli is a simple mixture of mayo, garlic, dijon, lemon and sriracha. It adds a wonderfully fresh and spicy kick to this sandwich.

For the bread, I used  a hearty whole wheat bread, but I think a seedy white bread or might have been better.  Serve this  for breakfast, brunch, lunch or dinner. It pairs amazingly well with light salads, soups or fruit salads.

Fried Egg BLT with Sriracha Aioli

Ingredients:

For the BLT:
sliced bread
bacon, cooked crisp
lettuce
sliced tomato
fried egg

For the Sriracha Aioli:
1/2 cup mayonnaise
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1 clove garlic, grated
3 tablespoons Sriracha sauce

Directions:

Combine all ingredients for the sriracha aioli. Mix well and set aside.

Cook bacon, toast bread and prepare lettuce and tomato. Fry egg to preferred doneness using bacon drippings. Assemble sandwich and enjoy!
