Herb Roasted Red Potatoes

This is my easy go to recipe for roasted red potatoes. Its so easy and delicious. This dish pairs perfectly with roast poultry or grilled steak. I served it the other day with roast Cornish game hen. You can add any variety of herbs that you like. You can also use any of the Mrs. Dash varieties for your dried herbs. Be sure when you roast the potatoes, to give them plenty of room in a large roasting pan. This will make sure the potatoes get brown and crispy. Crowding the pan will lead to steamed, soggy potatoes. To speed along the cooking time, be sure to cut the potatoes in small pieces too.
Herb Roasted Red Potatoes Recipe
Ingredients
- 3 lbs red potatoes, cut in similarly sized cubes
- olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried marjoram
- 1/4 teaspoon garlic powder
Method
- Preheat oven to 450 degrees. Prepare potatoes by washing and cutting. Combine the potatoes, garlic, herbs, and salt in a mixing bowl. Add enough olive oil to coat all the potatoes. Toss to coat.
- Spread the potatoes in a single layer on a baking sheet, and bake at 450 degrees until golden brown. Toss the potatoes about halfway through the baking time to ensure even browning. Baking time will vary, about 30-45 min, depending on the size of your potatoes.

I adore herb roasted potatoes. I can have these every night.
My mom always used to make something like this to go with pot roasts and things like that. Yet I have never been quite able to recreate it. I’m pretty sure this is the recipe that will do it though! Sounds delicious.
I love roasted potatoes! And you can put soooo many different spice/herb combos that you could always have some new variation. Like Christine…I could have them every night. LOL
My Favorite Guy hates potatoes, but he’ll eat French Fries and very artificial powdered mashed potatoes. I am wondering if he will eat these since they are not as soft in the middle like a baked potato and I presume you can bake them a little well done to give them a little crunch.
Herb roasted potatoes go well with meats and just about anything! If there are leftovers, I make them into potato salad too. Unbelievable flavors!
I do love herb roasted potatoes with a lot of oregano!
They taste even better when they are cold as apetizer.
The roasted potatoes sound delicious with herbs!
Hey Angie, I love roasted potatoes and your photo is a superb display of roasted goodness. They are so versatile too. I like adding some grated Parmesan for an Italian twist.
I really like your recipe, but if you want your blog to be taken seriously, then you should always proofread your work for blatant grammatical mistakes.
