Herbed Lemon Ricotta Dip

June is Dairy month, and it’s time to celebrate all things wholesome, nutritious and located in the Dairy aisle.  There are countless recipe possibilities located in the dairy aisle.  From savory cheesy recipes, to creamy sweet treats with fresh whipped cream, the dairy aisle has got it.  In my ongoing partnership with the NFRA, I’ll be sharing some of my favorite snack recipes this month that include items from the dairy aisle.

The past two weeks I’ve been thinking of new things I can make for my son as a snack, because his summer vacation has already started. And because I still have to work in the mornings, he’s been playing outside or chasing the dog around when I’m busy. That makes him super hungry, and he’s constantly going to the fridge to look for a snack.

For veggie dips, I usually do some sort of hummus, but we needed to change it up a bit. So I found a few recipes for herbed ricotta dip and thought it would make the perfect filling and nutritious afternoon snack to keep us satisfied until dinner time.

To make this dip, I just started with a  container of ricotta and went to my garden to pick some fresh herbs. I choose basil, oregano and Italian parsley, but you can use any combination of fresh herbs you have on hand. To really brighten up this dip, I added lemon zest and juice. It makes this dip taste so fresh and beautiful. I also added some olive oil and garlic for extra flavor. I love garlic, and add it to everything. Add more or less to this dip depending on your own tastes.

Yield: Serves 4

Herbed Lemon Ricotta Dip

Ingredients:

1 - 15 oz container Sargento Ricotta Cheese
2 cloves garlic, grated or diced very fine
1 tablespoon freshly chopped basil
1 tablespoon freshly chopped Italian parsley
1 teaspoon freshly chopped oregano
the zest from one lemon
1 tablespoon lemon juice
2 - 3 teaspoons olive oil
salt and pepper to taste
assorted vegetables for dipping

Directions:

Combine all ingredients in a medium bowl and mix well to combine.

Serve with fresh vegetables or crackers.
