Some of us at the Family Kitchen have been doing some Girl Scout copycat recipes. I did these dos-si-dos and some cinna-spins. Dos-so-dos are mild peanut butter cookie with oatmeal and a slightly sweet peanut butter filling. Several readers said they were better than the girl scout cookies. Not that I am trying to compete or anything, I think we should still support our girl scouts even if you don’t like to buy their cookies. I was never in a troop, but it sure seems like a great organization, and that’s why I support them every year by buying way too many cookies.

Homemade Girl Scout Cookies: Dos-si-dos

Ingredients:

1 batch of your favorite peanut butter cookie dough
1/2 cup peanut butter
1/2 cup powdered sugar

Directions:

Roll peanut butter cookie dough into 1/2″ balls. Place on lined baking sheet and press down lightly. Bake as directed. Remove from oven and allow to cool completely in the open air on the cookie sheet so they crisp up just a bit.

Blend together peanut butter and powdered sugar until creamy. Place a small amount on the back of one cookie and sandwich with another. Repeat until all cookies are done.
