Marshmallow Berry Tarts

My absolute favorite treat when I was a kid was marshmallows. I remember from when I was old enough to reach the stove, I would stand there and carefully roast marshmallow after marshmallow on little skewers over the burners. I was so meticulous, being carful to very evenly toast them not let them catch on fire. I hated when they got the least bit of black on them, yuck!

My son seems to have inherited my love for marshmallows too. (Although he likes to let them catch on fire and them blow it out like Daddy.) We both not only love simple  toasted marshmallows but also any recipe that contains marshmallows. And the baby must love them too because her eyes light up when she sees big brother roasting them. I know she’ll be over the moon happy when she’s old enough to enjoy her first marshmallow.

So this past weekend I put together a fun  new dessert recipe with our favorite sweet treat. For this fun recipe, I used one of my favorite products, Athens Mini Fillo Shells. These little shells are so versatile and perfect for both savory and sweet treats. And what I really love is that they make little sweet treats like these so easy to make.

This recipe is super simple and takes just 4 ingredients. It’s so easy to put together too. All you have to do is cut the marshmallows in half, place them in the Mini Fillo Shells and bake. This is a great recipe for the kids to help make because they can do most of the work. After the kids do the prep, all you have to do is bake them, and then after they cool, let the kids garnish them.

Here I’ve used raspberries and blueberries for a fun red white and blue dessert, but you can add any type or combination of berries you like. You could even just top with a piece of chocolate for a fun S’more dessert treat. These would be great for a summer party or an upcoming Labor Day BBQ too.

Ingredients:

  • 2 packages Athens Mini Fillo Shells
  • 15 large marshmallows, cut in half
  • 30 fresh raspberries
  • 30 fresh blueberries

Directions:

Place marshmallow halves in mini Fillo shells.

Bake Athens mini Fillo shells according to package directions, or until marshmallow is golden brown.

Top with a fresh raspberry and blueberry . Serve warm.
