Mini Fried Ice Cream Bites

Our summer is off to a great start. We’ve been doing lots of relaxing around the pool and have a few little getaway trips coming up as well as a cruise we’re super excited about. My son also started a summer camp this week. He’s doing a clay camp. They even have a potter’s wheel for each kid! I’m actually really jealous, it’s making me want to take some pottery classes myself.

We’ve also been making more fun kid-friendly desserts this summer. It’s fun cooking with my kids, especially on the weekend when we can all enjoy the goodies together. This past Father’s Day we made these fun little fried ice cream bites.It;s one of his absolute favorite desserts.

I’ve never actually made fired ice cream at home, we always just order it after enchiladas at our favorite Mexican restaurant. But since it was Father’s Day and we were making all of my husband’s favorite treats, I decided we would try and make them.

I started with Athens Fillo cups. They make the perfect start to any fun little dessert or appetizer. They are so versatile and you can make so many different things with them. I love using them for special occasions and when we have company. I always have a few boxes on hand in the freezer just in case. They’re one of my freezer staples!

For this recipe I just heated the Fillo shells according to package directions and then took 1 tablespoon vanilla ice cream and rolled it in crushed frosted flakes.

I recruited my son to smash the frosted flakes with a rolling pin.

If you only have regular frosted flakes just use them and combine them with a little sugar and a touch of cinnamon if you like.

Next I place those rolled bites of ice cream back in the freezer to set up. It takes about 20 minutes or so. Then I place those ice cream bites in the fillo shells and top with whipped cream and colorful sprinkles or fresh berries. I used colorful sprinkles this time because why not? Sprinkles make everything better!

I just love these little fried ice cream bites and so did my family. I’ve made them for a few friends in the past few days too and they love them too. People may turn down a regular sized dessert, but no one can turn down these little bites of crispy ice cream goodness. They’re just too good!

Ingredients:

  • 2 packages Athens Mini Fillo Shells
  • 1 pint Vanilla Ice Cream
  • 2 cups crushed frosted flakes
  • freshly whipped cream
  • rainbow sprinkles or fresh berries

 

Directions:

Follow package directions to heat Athens Fillo shells, cooking them until golden brown and crisp.

Take 1 tablespoon vanilla ice cream and roll it in crushed frosted flakes, place in freezer to set up.

Place frosted flake covered ice cream balls in fillo shells. Top with whipped cream and sprinkles or fresh berries.
