Peanut Butter Pancakes

Pancakes are my kid’s absolute favorite breakfast item. They’re sweet, soft and perfect for little hands. My daughter loves them so much she can already eat a whole one by herself. And my growing son can eat 3 or 4. He’s already eating as much or more than me. I’m afraid to see how much he’ll eat as he enters his teen years. I usually save pancakes for the weekend  because I don’t like to serve everybody all that sweet sugary syrup. But I just found a new way to serve pancakes that will actually add protein instead of tons of sugar and is super delicious.

For my pancakes I used Jif Maple Breakfast Spread. I just heated it in the microwave for 30 seconds with a little butter and then drizzled it over our pancakes. It tastes so good, you’ll forget all about syrup!

Peanut Butter Pancakes

Ingredients:

For the Pancakes:

  • 1 cup Self Rising Flour
  • 1 cup Buttermilk
  • 1 large egg
  • 2 tablespoons butter
  • 1 tablespoon sugar

For the Peanut Butter Topping:

  • 1/2 cup JIF Maple Peanut Butter
  • 2 tablespoons butter (Optional)

Directions:

For the Pancakes:

Combine flour, buttermilk, eggs, sugar and butter in a large bowl and whisk well. Heat a large skillet over medium heat and drizzle with olive oil. Spoon batter into skillet and let pancake bubble and brown on one side. Flip and brown on the other side. Continue cooking all pancakes.

For the Peanut Butter Topping:

Combine peanut butter and butter in a medium microwave safe bowl. Heat for 30 seconds on high, Mix well. Continue to heat on high for 10 second intervals if needed to melt peanut butter and butter together.

Serve pancakes drizzled with maple peanut butter.
