Pineapple Agua Fresca and an OXO Giveaway
I love pineapple everything, but I don’t love peeling and coring pineapples. And you’ll never see me pay grocery store prices for cut pineapple, because I’m just too cheap. So when I was able to try OXO’s new pineapple peeler and corer tool, I jumped at the chance. Well, actually my husband did, because I always rope him into peeling and coring my pineapples and he loves gadgets.
This little gadget is so easy to use and it peels and cores a pineapple in less than a minute. I love it!
It helps me make delicious and healthy pineapple recipes like this pineapple aqua fresca that much faster. Agua frescas are something we love in the summer. This pineapple mint version is just heavenly. You can add a little agave nectar for sweetner if you’d like. This pineapple was plenty sweet enough for us though, I didn’t add any additional sweetener.

Pineapple Agua Fresca
Yield: 8 servings
Prep Time: 5 minutes
Total Time: 5 minutes
Ingredients:
1 large pineapple
2 cups water
agave nectar to taste, (optional)
6 mint leaves, plus additional for garnishDirections:
Peel and core pineapple, chop coarsely. Place in blender with 2 cups water, or enough to fill. Blend on high until smooth.
Add mint leaves and pulse until combined. Serve agua fresca over ice garnished with mint

Yum! I love pineapple!! The way I eat healthy in the summer is being sure to include all kinds of fresh fruits and veggies from local farmers’ markets.
I drink plenty of water and the way I eat healthy is to eat lots of fruit and vegetables during the summer months.
My favorite summer recipe is any Greek-style salad. Mixed greens, olives, tomatoes, feta, cucumber, and a lemony vinaigrette are so refreshing!

My absolute favorite thing to eat during the summer -hands down- is Watermelon Gazpacho, which I like to call WatermelOMGazpacho. This is basically the recipe, I just puree everything in the end, and at 110 calories, its liquid heaven !!! http://allrecipes.com/recipe/watermelon-gazpacho/

My favorite summer hint is to make a pineapple syrup from the peel of the pineapple that you would usually throw away. If you simmer the peel in a saucepan with some sugar and water for about an hour, you can then scrape the remaining pineapple flesh from the peel and make a syrup which can be used on ice cream or with seltzer to make a refreshing soda. I hope I win the pineapple peeler because this would make the process that much easier.

My tip is buy as much fruits and veggies as possible to fill your fridge. The more color the better. My faves are cherry and baby carrots. Sometimes I snack on thinly sliced onion. I know, its weird. Its crunchy and refreshing. Only happens in the summer. In the cold weather I’d crave for comfort food.

My favorite summer recipe is for smoothies. I add a scoop of protein powder, a teaspoon of fiber, a banana, a handful of whatever berries I have in the fridge and mix it all with about 1/2 cup of frozen mango pieces. Delicious!

i’m thinking of pineapple drinks in a tropical locale… mmmm….
When I want a sweet but I do not have them I will freeze grapes and they are cool and tasty. Another thing I do is that bananas tend to ripen quickly in the summer. I will peel them and then freeze them so that I do not have to waste the banana and use them later in breads or other baked goods.

There’s nothing better than to go out to my own garden, and pick something fresh to make for dinner.
