Prosciutto and Basil Pesto English Muffin Panini

Now that summer is here, and school is out, I’ve been trying to think of fun breakfast ideas that work well to eat at home and on the go. Before the baby arrives, we’ve been trying to do as much fun little activities with my son as possible, so he doesn’t feel like he’s playing video games all summer. Last weekend we made our annual trip to our local Gatorland. It’s a fun place to see, feed, eat and learn about our massive Florida gators. We got pictures of him feeding gators, and one where they let you sit on a gator! We all had so much fun.

And for breakfast that morning I wanted to make something special, something filling, and something that could be easily eaten in the truck on the way there. So I made these delicious Prosciutto and Basil Pesto English Muffin Paninis. My panini maker has a permanent location on my countertop because we use it so much for lunches, but I had never thought to use it for breakfast before making these.

To start these paninis, I used Thomas English Muffins. These English Muffins are perfect for on the go breakfast sandwiches. I like to use them for a  variety of different egg based sandwiches, as well as eating them just with butter and jam. I just can’t resist those wonderful nooks and crannies!

Here I used the plain English muffins, but you could also use the whole wheat, multi-grain, double protein or the high fiber variety.

Next I add some delicious Prosciutto, mozzarella cheese, and fresh spinach leaves. You could use any type of ham and cheese though that you have on hand.

Then I top that with a fried egg and basil pesto before placing it in my panini maker. You can use either fresh basil pesto, or pre-made jarred pesto.

After a quick toast in the panini maker, it becomes the perfect hand-held breakfast.

Prosciutto and Basil Pesto English Muffin Panini

Ingredients:

  • 4 slices Prosciutto
  • 4 slices Mozzarella cheese
  • 4 Eggs, cooked over hard
  • 1 cup fresh Spinach
  • 4 teaspoons Basil Pesto
  • 4 Thomas English Muffins 

Directions:

Cook 4 eggs to over hard, or over medium. Assemble paninis layering the Prosciutto, Mozzarella, egg, fresh spinach, and basil pesto on an English muffin.

Cook paninis in a Panini maker set to medium for approximately 5 minutes, or until sandwich is heated through and cheese is melted.

Tip: For perfectly sized eggs for your Panini, use an egg ring to cook eggs.
