Red Cabbage Salad with Cranberries

Here is a healthy alternative to those calorie laden side dishes on Thanksgiving, red cabbage salad. It has a sweet and sour flavor from agave and vinegar. I added dried cranberries and garnished it with fresh apples. It’s amazingly simple and a  perfect make ahead dish, because it’s so much tastier after marinating in the fridge for a day.

Red Cabbage Salad with Cranberries

Ingredients:

1/2 head of red cabbage, shredded fine
1/2 cup cranberries
1/4 cup balsamic vinegar
3 teaspoons lemon juice
2 tablespoons agave nectar or honey
1/2 teaspoon kosher salt
1/4 cup olive oil
sliced apples for garnish

Directions:

1. Add red cabbage, cranberries, vinegar, lemon juice, agave, kosher salt and olive oil to a large bowl. Toss well. Refrigerate for at least 15 minutes before serving.

2. For best results, make the day before. Serve salad garnished with freshly sliced apples.
