Red Velvet Pancakes with Coconut Syrup and Blueberries

When we were at Cosco the other day my son spotted the fireworks. The 4th is right around the corner, and they have a ton of fun fireworks for sale there. I just couldn’t say no to him, so he came home with a huge box of fireworks with the agreement that he can’t open the box until the 4th. Everyday he’s been asking me, “Is it the 4th yet?”

Of course he’s too little to do anything but sparklers, even though my husband will let him shoot off a bottle rocket when I have my back turned. He says that they’re safe, I don’t think so, but maybe I’m just too overprotective. Since I know my son is going to be all wound all day waiting for the sun to set so he can have some firework fun, I’ve been planning some fun things to do that day to keep him as occupied as possible. And the first thing we’re going to start off with are these festive red, white and blue pancakes.

These pancakes are so easy to do. You just take  some Bisquick, a little cocoa powder and lots of red food coloring. To get that nice deep red color, I like to use gel food colors. After the batter is a nice deep red, just make some pretty pancakes on your griddle.

While the pancakes are cooking, take some coconut cream and powdered sugar along with a little coconut milk (or regular milk) to make the frosting. After you’re pancakes are done, just top with fresh blueberries and that’s it!

Ingredients:

For the Pancakes:
2 cups Bisquick
1 cup milk
2 eggs
2 tablespoons cocoa powder
2 tablespoons powdered sugar
red food coloring

For the syrup:
1 cup powdered sugar
1 tablespoon coconut cream
2 -3 tablespoons regular or coconut milk

2 cups fresh blueberries

Directions:

Combine Bisquick, milk and eggs according to package directions for pancakes, adding the cocoa powder and powdered sugar. Make pancakes according to package directions.

Combine all ingredients for the syrup and stir well, until all the lumps are gone.

Serve pancakes topped with coconut syrup and fresh blueberries.
