Rooster’s Beak (pico de gallo)

Did you know that you were asking for rooster’s beak when you order pico de gallo at the Mexican restaurant? I didn’t. I thought I knew some Spanish, I knew gallo for rooster, but I didn’t put it together, and this came as a big surprise to me. According to Winkled, this salad is called rooster’s beak, because they use to eat with two fingers, like a pecking rooster. Too funny! This is my simple recipe for rooster’s beak. This dish is very easy and flavorful and can be served along side many different Spanish inspired dishes.

Ingredients:

3-4 ripe tomatoes, chopped
1/2 sweet onion, chopped
2 tablespoons fresh cilantro, chopped finely
The juice of 1 lime
1/2 teaspoon kosher salt

Directions:

Combine all ingredients and mix well. Cover with plastic wrap. Let it set for at least 15 minutes in the fridge before serving.
