A few years ago I decided I wanted to make a change to get more whole grains into my family’s diet. The change has been slow. It’s hard to change old habits for myself and for those I love. I started by turning away†completely from white bread and white rice. I have also introduced other types of grains into our meals. One of the easiest changes that we made recently was to switch to whole grain pasta. Since pasta is always at least one of our go-to weeknight meals, it made good sense. My son didn’t even seem to know he was eating healthy whole grain pasta instead of his usual white pasta. I really don’t think there’s a reason I would go back to regular pasta now.

Shrimp Scampi over Whole Grain Linguini

Ingredients:

¼ cup olive oil

¼ cup butter

6 cloves garlic, grated

salt and pepper to taste

1 teaspoon red pepper flakes

2 lbs peeled and de-veined shrimp

½ cup vermouth or dry white wine

¼ cup roughly chopped Italian parsley

1 tablespoon fresh thyme

the juice of 1 lemon

1 package Barilla® Whole Grain Linguini

Directions:

Bring 4 - 6 quarts of water to a rolling boil over high heat, add salt to taste with a drizzle of olive oil. Add Barilla® Whole Grain linguini to boiling water. Stir gently. Return to a boil. For al dente pasta, boil uncovered, stirring occasionally for 7 minutes. For more tender pasta, boil an additional 1 minute.

Remove from heat. Drain well.

Preheat a large skillet. Add olive oil, butter and garlic. Add salt and pepper and red pepper flakes. Sauté until garlic is fragrant. Add shrimp, parley and thyme. Add vermouth and lemon juice. Bring to a boil over medium heat.

Cook until shrimp are almost opaque. Add drained pasta and toss well. Continue to cook over medium heat until shrimp are completely opaque and pasta has absorbed some of the sauce.

Serve with fresh salad.

    I just love the simplicity of this dish! Pairing shrimp with Barilla Whole Grain Pasta is one of my favorite combinations. It cooks fast as does the shrimp so dinner is ready in minutes!

    I have to admit that I prefer white pasta, but we’ve made the switch and I love that Barilla is a really great source of fiber for our family’s diet….especially for my sons who eat a lot of the wrong foods when left to their own devices.

    I love Barilla’s Whole Grain Pasta because it provides more fiber, it is nutritious and delicious. I have been buying the Barilla’s regular pasta for many years and switched to this whole grain once I tried and love it’s texture.

    I love that its a very well known name brand offering whole grains to the masses. I am a huge proponent of eating whole foods, especially whole grains and have noticed that lots of people have a negative opinion of “health foods.” With the Barilla name comes a guarantee that its going to taste great and hopefully that will get more people to try it and see that eating healthy tastes great!
