Shrimp Scampi over Whole Grain Linguini
A few years ago I decided I wanted to make a change to get more whole grains into my family’s diet. The change has been slow. It’s hard to change old habits for myself and for those I love. I started by turning away†completely from white bread and white rice. I have also introduced other types of grains into our meals. One of the easiest changes that we made recently was to switch to whole grain pasta. Since pasta is always at least one of our go-to weeknight meals, it made good sense. Barilla® Whole Grain Pasta is a great way to get more whole grains into my family’s diet. It was an easy switch from our regular Barilla® white pasta. My son didn’t even seem to know he was eating healthy whole grain pasta instead of his usual white pasta. Barilla® is made with 51% whole wheat and it’s an excellent source of fiber, delivering three times the fiber of regular pasta. I really don’t think there’s a reason I would go back to regular pasta now.
And best of all it tastes good. One of the reasons I was waiting to switch to whole grain pastas was that one of my family members told me that the first time she had tried whole grain pasta its taste was not that great. I was skeptical myself about the taste of Barilla®’s new whole grain pasta, but was pleasantly surprised by my first taste of the pasta. The taste of Barilla® Whole Grain Pasta is so much better than I expected. I substituted it for my regular pasta in one of my favorite simple pasta dishes, shrimp scampi. In a dish like shrimp scampi, where the simple flavors of each ingredient work off each other, substituting a new pasta could have been disastrous. But to our surprise, the taste was absolutely wonderful.
Barilla® is so confident you’ll love their pasta, there’s a taste guarantee on Barilla® Whole Grain pastas. If you don’t love it, you get a free box of your favorite Barilla® pasta. Shrimp Scampi over Whole Grain Linguini
¼ cup olive oil
¼ cup butter
6 cloves garlic, grated
salt and pepper to taste
1 teaspoon red pepper flakes
2 lbs peeled and de-veined shrimp
½ cup vermouth or dry white wine
¼ cup roughly chopped Italian parsley
1 tablespoon fresh thyme
the juice of 1 lemon
1 package Barilla® Whole Grain Linguini
Bring 4 - 6 quarts of water to a rolling boil over high heat, add salt to taste with a drizzle of olive oil. Add Barilla® Whole Grain linguini to boiling water. Stir gently. Return to a boil. For al dente pasta, boil uncovered, stirring occasionally for 7 minutes. For more tender pasta, boil an additional 1 minute.
Remove from heat. Drain well.
Preheat a large skillet. Add olive oil, butter and garlic. Add salt and pepper and red pepper flakes. Sauté until garlic is fragrant. Add shrimp, parley and thyme. Add vermouth and lemon juice. Bring to a boil over medium heat.
