Spicy Pumpkin Enchiladas
I hope everyone had a wonderful Halloween. My little one was a pirate and we went trick or treating at a neighborhood festival. We had these before heading off to trick or treat. I had been wanting to do pumpkin enchiladas for while after seeing them on several blogs. I just made up this recipe to suit my own tastes. They were amazing. I miss eating enchiladas but this is like the first time i heard of pumpkin enchiladas and spicy, too. Thanks for this recipe.
