Spinach and Strawberry Salad with Feta

Guess what’s in season here in Florida, that’s right, spinach! I’ve been buying so much spinach it’s not even funny anymore. I’ve been adding sliced spinach to our smoothies, pasta dishes and of course salads like this one. We’ve also been eating a ton of fresh sauteed spinach as a side item at dinner. My son loves creamed spinach and I especially love lemon garlic spinach.

Since we’re always trying to eat healthier, I thought I would try some of our sweet strawberries (which are also still in season in this sweet and savory spinach salad. This salad starts with fresh spinach, then I layer on toasted walnuts, fresh bell peppers (which are also in season, and feta cheese. You can also just use raw walnuts, but toasting them brings out such a wonderful nutty flavor. Lastly I drizzle on a little walnut oil and balsamic vinegar. These stronger flavors balance the sweetness of the strawberries very nicely.

Since we live in Florida – it’s pretty easy to enjoy fresh produce because we have some great fresh, wholesome and local options available year round. In March, when everyone is in the country is suffering through snowstorms and freezing temperatures us Floridians are able to brag about fresh strawberries! We’ve been enjoying strawberries for dessert after dinner for weeks now and I love it! Besides our incredible strawberries, we have a tone of fresh fruits and vegetables in season too. Spinach and Strawberry Salad with Feta

Ingredients:

4 cups fresh spinach
1 cup sliced strawberries
1/4 cup roughly chopped walnuts
1/4 cup feta cheese
2 teaspoons walnut oil
2 teaspoons balsamic vinegar

Directions:

Toast walnuts by placing them in a single layer on a cookie sheet. Bake for 350° for 8 to 10 minutes, checking periodically so that they don't burn.
Arrange spinach on plates. Top with sliced strawberries, walnuts and feta cheese.

Drizzle salads with walnut oil and balsamic vinegar.
