Spinach, Kale and Steak Torte

The past few weeks I’ve been busy putting in new plants in our yard. You know how when you’re redecorating, you should just clear the room?  Well that’s what I did with the yard. I had just about everything just cleared out, except the shade trees and grass. And now I’m starting over.

As of right now I’ve went a bit azalea crazy, I’ve set out approximately 60 dwarf azaleas, and still have plans for more. I’m also not done with the camellias, gardenias and hydrangeas either. Overly shady yards like ours in the deep south aren’t easy. But I’ve sought the help of a local nursery that’s given me some great tips on how I can spruce everything up and have plants that will thrive and be beautiful.

Yield: 4 servings

Spinach, Kale and Steak Torte

Ingredients:

  • 8 eggs
  • 1/2 cup heavy cream
  • 1/2 cup chopped leftover and cooked steak
  • 1 cup chopped kale
  • 1 cup chopped spinach
  • 1/2 cup sliced mushrooms
  • 1/4 cup diced onion
  • 1/4 cup chopped marinated artichokes
  • 1/2 cup shredded swiss cheese
  • 1 tablespoon coconut oil

Directions:

Heat oven to 400°. Add coconut oil to a large skillet and melt over medium heat. Add steak, kale, spinach, mushrooms, onion and artichokes. Sauce until pinch and kale have wilted. Add eggs and milk to a large bowl and whisk well. Pour over eggs and cook for 2 - 3 minutes, or until edges have started to set.

Transfer to oven and bake at 450° for 10-15 minutes, or until torte is cooked through and set in the middle.
