Triscuit Pizza Nachos

Having my son out for the summer means I have to get a little more creative at lunch time. During the school year, I can easily send him with a peanut butter sandwich like the other kids, and he doesn’t have anyone to complain to come lunchtime. But with me right in the next room, and a pantry full of goodies, my son is insesntent that I make him something exciting everyday for lunch.

I also try to make us food that’s somewhat healthy, so this is what I came up with today, a platter of Triscuit nachos. I made them pizza nachos to make them even more kid friendly. What little kid wouldn’t love these?

For the sauce, I used pre-made marinara, cream and parmesan to make an incredibly tasty creamy tomato sauce. Then I topped that with lots of mozzarella cheese, bell peppers, onions and pepperoni. After a short time under the broiler to melt the cheese, I garnished these nachos with some green onions before serving.

A quick and easy recipe for Triscuit Pizza Nachos.

Ingredients:

For the sauce:

  • 1/2 cup marinara sauce (from jarred)
  • 1/4 cup heavy cream
  • 2 tablespoons parmesan cheese

For the nachos:

  • 24 TRISCUIT Crackers
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons chopped green bell pepper
  • 2 tablespoons chopped red bell pepper
  • 2 tablespoons chopped red onion
  • 1/4 cup chopped pepperoni
  • 3 tablespoons chopped green onion

Directions:

Heat oven broiler to high. Combine all ingredients for sauce in a small saucepan and bring to a boil over medium heat. Cook for 4 - 5 minutes, or until slightly thickened.

Arrange TRISCUIT crackers on a broiler safe platter. Pour sauce over crackers and top with cheese, bell peppers, onions and pepperoni. Place nachos under broiler in oven for just a few minutes, or until cheese has melted.

Garnish with green onions before serving.
