Zesty Spaghetti Bolognese

I’m so happy today to be partnering with Kraft to bring you this fun weeknight dinner that your kids will love. Since my son has started back to school, he’s been asking for his favorite meal, spaghetti just about every night. He loves it so much, that I make sure to make it every week.

I try to make my spaghetti a little more nutritious by adding lots of veggies and serving it over a low glycemic pasta. By adding mushrooms, bell peppers, carrots and onions to my pasta sauce, I feel better about serving it to my family. I make sure to chop all the veggies very small by letting them go for a whirl in the food processor. That way my son doesn’t even notice them.


I love to add red wine to my sauce, but you can omit the wine if you prefer. Just add more water and continue to cook the sauce until it is very thick. If you need to add additional liquid to the sauce at the end, be sure to add pasta water. It will help bind the Bolognese so it has a nice consistency.

I served this sauce over a low glycemic pasta, but you can also use whole wheat pasta or butternut squash. A spaghetti squash can be easily pierced and cooked in the microwave while your sauce is cooking. Then just serve the veggie loaded spaghetti sauce over the squash. My son doesn’t even notice when I serve him spaghetti squash!


After eating a nice meal like this, we love to go out as a family and ride our bikes in the neighborhood. My son still has his training wheels, he won’t let us have them yet! But he can ride his bike without the training wheels in the driveway, he just hasn’t gotten the courage to ride around the block without them.

Zesty Spaghetti Bolognese

Ingredients:

1/2 medium onion, chopped
1 cup chopped mushrooms
1/2 cup chopped carrot
1/2 cup chopped bell pepper
2 cloves garlic, chopped fine
1 lb. extra-lean ground beef
1/4 cup KRAFT Lite Zesty Italian Dressing
1 can (6 oz.) tomato paste
2 cups red wine
2 cups water
3/4 lb. spaghetti, uncooked

Directions:

Heat skillet over medium heat. Add vegetables and cook 5 min. or until crisp-tender. Add meat; cook on medium-high heat until browned, stirring frequently. Stir in tomato paste, wine, water and salad dressing. Bring to boil; simmer on low heat for an hour or two or until sauce is very thick, stirring occasionally.

Cook spaghetti as directed on package.

REMOVE sauce from heat. Drain spaghetti; place in large bowl. Top with sauce.
