Tex Mex Chicken Salad Sliders

My kids had the best summer, but they were so ready to get back to school. They couldn’t wait to see their friends and make some new ones too! This year both my son and daughter are on the same campus. It’s so nice to see my son walk his little sister to her class. They are just pure sweetness!
I’ve been trying to think of some creative lunches for the kids that they both will eat. My son being a little older will eat everything. He’s probably the least pickiest kid I’ve ever seen. He’d be just as happy with a can of sardines and crackers as he would with mac and cheese and chicken nuggets.
My daughter however, can be picky, real picky. So I try my best to get creative and make delicious meals that she will eat and enjoy. This simple Tex Mex Chicken Salad is something she and my whole family loves. It’s filled with lots of fresh veggies, corn and black beans as well as seasoned lean baked chicken.
I serve this chicken salad on our favorite King’s Hawaiian Original Dinner Rolls. My family loves all King’s Hawaiian products. They get super excited every time I come home with Kings Hawaiian bread because they know I’m going to be making something really special!
I use to only buy King’s Hawaiian on special occasions, but now I’m just in the mind set that everyday can be a special occasion. You only live once right? And if we all love this amazing Hawaiian bread so much, why aren’t we buying it more often! So I buy King’s Hawaiian just about every week! It’s amazingly versatile and my kids absolutely love it!
King’s Hawaiian has several products that work great for school lunches. The King’s Hawaiian Mini Sub Rolls and King’s Hawaiian Sliced Bread make amazing sandwiches that my kids absolutely love. I can make simple deli sandwiches with the sliced bread and can fill the mini sub rolls with tuna or chicken salad, meatballs or their favorite deli meats and veggies.
To make this Tex Mex Chicken Salad, I start by seasoning 2 pounds of chicken breasts tenderloins with taco seasoning on both sides. You can use a packet, or just use homemade seasoning. Then bake these tenderloins at 425° for about 15 minutes, or until done. Then you just let them cool.
As they are cooling, you chop up some red onion, bell peppers, celery and parsley or cilantro. Then take sa can of black beans that are rinsed and drained and some defrosted whole kernel corn and add that to your mixing bowl too.
Next chop up the chicken and add that to the bowl too along with some sour cream and mayonnaise. Then just mix it up and that’s it! This is so delicious and the recipe makes plenty for the whole family’s lunches for the week.
To make these sliders I just add a little piece of lettuce and then fill the King’s Hawaiian rolls with the chicken salad. Then I pack these in their lunch boxes with some fruit and veggies and lunch is done!

Tex Mex Chicken Salad Sliders Recipe

Ingredients:
- 1 package King’s Hawaiian Original Dinner Rolls
- 2 lb. boneless, skinless chicken breast tenderloins
- 1 package taco seasoning (homemade or pre-packaged)
- 1/3 cup chopped red onion
- 1/3 cup chopped red bell pepper
- 1/2 cup chopped celery
- 1/4 cup chopped fresh cilantro or parsley
- 1 (15oz) can black beans rinsed and drained
- 1 cup whole kernel corn, defrosted
- 3/4 cup sour cream
- 1/2 cup mayonnaise (or more to taste)
Directions:
Heat oven to 425°. Add chicken breasts tenderloins to a large sheet pan. Sprinkle both sides with taco seasoning. Bake chicken tenderloins for about 15 minutes, or until internal temperature is 165°. When chicken is done, remove from oven and let cool and then chop.
Add red onion, bell peppers celery, parsley, black beans, corn, sour cream and mayonnaise to a large bowl. Add chopped chicken and mix well.
Serve in Kings Hawaiian sweet rolls with fresh fruit and vegetables as a side for a delicious and easy lunch!
