Avocado and Corn Salad with Creamy Avocado Dressing and a Hass Avocados Recipe Contest

Avocados are so rich and delicious, and can be enjoyed in more ways than just guacamole. I love to add them to all sorts of different salads and sandwiches. One of my favorite ways to enjoy them is to add them to sandwiches in place of mayonnaise. They give a rich and creamy texture and add healthy fats and lots of nutrition. Hass avocados have nearly 20 vitamins and minerals, making them a nutrient-dense food choice. I have entered this recipe below in the Kick Off with Hass Avocados Recipe Contest. It’s a simple salad with oven roasted corn and chopped avocados, but has the most amazing dressing. For the dressing I combined creamy hass avocados with lime, mayonnaise and spices to make the tastiest salad dressing.

Yield: Serves 4

Avocado and Corn Salad with Creamy Avocado Dressing

For the Salad

2 hass avocados, chopped
1 large tomato, chopped
1/2 onion, chopped
2 ears of corn, oven roasted and kernels removed
the juice of 1 lime
olive oil
salt and pepper
1 large head of romaine lettuce, chopped

For the Dressing

2 hass avocados
1/4 cup mayonnaise
1/4 cup milk
the juice of 1 lime
1/4 teaspoon garlic powder 1/4 teaspoon onion powder
1/2 teaspoon cumin


For the Salad

1. Preheat oven to 400 degrees. Drizzle olive oil on corn and add salt and pepper. Roast at 400 degrees for 15 - 20 minutes, or until kernels are tender crisp. Cut kernels off corn cob.
2. Add chopped lettuce to a large salad bowl. Add chopped tomato, onion and corn kernels. Add avocado and lime juice.

For the Dressing

1. Add all ingredients for dressing to a food processor. Turn on high and blend until creamy and smooth. Add dressing to salad and toss if desired.

    This is the perfect side salad, or just add a little grilled chicken or beef and it would make a delicious meal too.

    I’m learning to like Avocados. We never ate them as kids so I didn’t know how delicious they were! This looks like a great recipe.
