Avocado and Corn Salad with Creamy Avocado Dressing and a Hass Avocados Recipe Contest

One of my favorite ways to enjoy them is to add them to sandwiches in place of mayonnaise. They give a rich and creamy texture and add healthy fats and lots of nutrition. For the dressing I combined creamy hass avocados with lime, mayonnaise and spices to make the tastiest salad dressing.

Avocado and Corn Salad with Creamy Avocado Dressing

Ingredients:

For the Salad

2 hass avocados, chopped
1 large tomato, chopped
1/2 onion, chopped
2 ears of corn, oven roasted and kernels removed
the juice of 1 lime
olive oil
salt and pepper
1 large head of romaine lettuce, chopped

For the Dressing

2 hass avocados
1/4 cup mayonnaise
1/4 cup milk
the juice of 1 lime
1/4 teaspoon garlic powder 1/4 teaspoon onion powder
1/2 teaspoon cumin

Directions:

For the Salad

1. Preheat oven to 400 degrees. Drizzle olive oil on corn and add salt and pepper. Roast at 400 degrees for 15 - 20 minutes, or until kernels are tender crisp. Cut kernels off corn cob.
2. Add chopped lettuce to a large salad bowl. Add chopped tomato, onion and corn kernels. Add avocado and lime juice.

For the Dressing

1. Add all ingredients for dressing to a food processor. Turn on high and blend until creamy and smooth. Add dressing to salad and toss if desired.
