Bacon, Avocado and Egg English Muffin Sandwich

This has been an exciting week for my family. My son has Greek Day at his school today. He’s so excited. They’ll be doing games and showing the parents all the fun things they’ve been learning. Friday is his birthday too, and we’ve got all kinds of fun things planned. Then in a few weeks we have the neighborhood church’s Greek Fest, which is also so much fun. Oh and Halloween too!

I also took our (new to us) cat to the vet today for her first shots. Everyone in my family told me I was just hormonal when I was insisting on getting a cat when I was pregnant, and I was outvoted. But I hoped and prayed for a cat and luckily, one adopted me ☺. So when I took her in today, we found out she’s actually a he, and he’s a senior boy, but in perfect health. I was so happy to find out he’s just carrying around extra weight and not kittens!

Because this week has been so busy, and we’re also getting into the busier time of year, I try to save time whenever I can. That means starting with a quick and easy, but always homemade hot breakfast. My family loves breakfast sandwiches, and because the baby has started eating a bit, I’ve been buying lots of avocados.

My daughter loves to play in and eat a little mashed avocados. They taste amazing for the whole family, and I can mash up one avocado and add it to breakfast sandwiches for us, and give a little to the baby for breakfast. It’s a win – win.

For these sandwiches, I start with my family’s favorite fresh English Muffins from Thomas’ Bagels. They’re so good for breakfast sandwiches, as well as a perfect side to any breakfast.

Next I layer on crisp bacon, fresh spinach, crisp cucumber and of course a fried egg. And to top it off and make it extra delicious, I add some mashed avocado. This also adds so much great nutrition, and everyone just loves it.

Yield: Serves 4

Bacon, Avocado and Egg English Muffin Sandwich

Ingredients:

4 Thomas plain English Muffins, split

4 large eggs

4 slices bacon, cooked crisp

2 medium avocados, mashed

½ cup fresh spinach leaves

½ cup sliced cucumber

Directions:

Toast English muffins. Fry eggs to desired doneness. Top English muffin with fried egg, crisp bacon, smashed avocado, spinach leaves and cucumber.

Serve and enjoy!
