Bacon Wrapped Hearts of Palm with Caramelized Shallot and Olive Dip

Christmas this year is going to be so special for our family. We’ve got a newborn son that was born just before Thanksgiving that we are so in love with. My other 2 kids are fighting over the baby right now, with my daughter often running to me shouting that her older brother “isn’t sharing the baby.”
This past Thanksgiving we did something we’ve never done before, we actually didn’t cook. Because I had the baby just a few days before the holiday, we decided to just order dinner from a restaurant just down the street from us. It was a weird feeling, waking up on Thanksgiving and not preparing the Turkey or prepping all the sides and desserts, but we went with it. We had a super lazy day with a delicious restaurant meal we served at home.
Since we didn’t cook for Thanksgiving, we’re going all out for Christmas. We have family coming over and we’re going to have a delicious meal cooked by the whole family. Tomato there’s nothing more special than all standing around the kitchen, with everyone cooking together. Each family member, even the kids are in charge of their own dish, or 2! And everything just comes together in the end in now amazing family cooked spectacular meal.
One thing I want to do different this year is to pick recipes for everyone, and have everyone make their own recipe, and put their own spin on it if they want! This way all the dishes kind of go together too, and I can easily shop for everything at once to make all of our dishes.

I absolutely adore chocolate covered cherries at Christmas, but have never made my own. I’m going to make these Chocolate Coated Cherries with the kids a few days before. Hopefully there will be some left over!

But back to the recipe that I created, these Bacon Wrapped Hearts of Palm with Caramelized Shallot and Olive Dip. This recipe is a lot easier than it sounds and is perfect for celebrations. Hearts of palm are not only delicious in salads, but are great in appetizer recipes like this one too.
This recipe is really super simple. Just start by cutting the hearts of palm in half and wrapping bacon around them. Then just bake at 350° until the bacon is crisp.
For the dip, just combine mayonnaise, sour cream, some caramelized shallots, onion powder and diced olives. For garnish, I add some fresh thyme and a few more chopped olives. That’s it!

Bacon Wrapped Hearts of Palm with Caramelized Shallot and Olive Dip

Ingredients:
For the hearts of palm:
- 1 can Reese Hearts of Palm
- 5 -6 slices bacon
For the dip:
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 teaspoon onion powder
- 1 shallot, sliced thin and caramelized in olive oil
- 2 teaspoons finely diced olives (plus more for garnish)
- 1/2 teaspoon fresh thyme leaves for garnish
Directions:
For the hearts of palm:
Heat oven to 350°. Cut bacon in half. Cut hearts of palm in half. Wrap bacon around hearts of palm and place on parchment paper lines cookie sheet. Bake at 350° until bacon is crisp, about 20 minutes.
For the dip:
Combine mayonnaise, sour cream, onion powder, caramelized shallots and diced olives in a small bowl. Mix well to combine. Garnish with additional diced olives and fresh thyme.
