Basil Butter Grilled Corn

My son’s school year is almost over. That means Memorial Day is just around the corner. We don’t have anything special planned. We’ll just be having a little backyard get-together with a few friends and family. Nothing is more relaxing to me that spending quality time with the people that matter most in your life, all while enjoying great food and the warm weather.

The past few weekends, I’ve been smoking ribs on Saturday afternoon. So I know I’ll definitely have some smoked ribs on the menu. We can’t get enough of them. My husband says I never make enough, So I’ll be making extra on Memorial day. If I plan enough that I think there should be leftovers, that would be just enough to make sure everyone is stuffed.

I’ll also have this fabulous Butter Basil Grilled Corn. Nothing to me is better than fresh summer grilled corn, but adding freshly chopped basil and good butter makes it so much more special.

Florida corn is currently in season and super cheap at the grocery store, so I make sure to get plenty on each shopping trip. My family absolutely loves it and there’s so many ways you can make it.

For this recipe, I used white corn. It’s my family’s favorite. I think it’s a bit firmer and not too sweet. But you can also use local sweet yellow and bicolor corn.

It’s super simple to eat fresh, local fruits and vegetables in Florida because our growing season is all year long. The mild temperatures in Florida allows for us to have have fresh fruits and vegetables anytime we want. Eating these fresh, seasonal items means our foods are fresher and tastier, and the nutritional value is optimized. It also encourages a diverse diet that is more economical and harmonizes with nature’s production cycle.

To find the freshest foods, make sure to look for the Fresh From Florida logo. This way you’ll be sure that the produce is local and fresh. You can find this logo in the produce department, the seafood department and in your favorite local Florida restaurants.

For this recipe I used Fresh From Florida Sweet Corn.  Our local sweet corn is really cheap right now, so I’ve been serving it nearly every night. It’s so sweet and flavorful. I love to experiment with new corn recipes like this one.  This corn makes a wonderfully side dish any time of the week.

Basil Butter Grilled Corn

Ingredients:

4 ears of Fresh Florida Sweet Corn

2 tablespoons butter

1/4 cup chopped fresh basil

salt and pepper to taste

Directions:

Preheat oven broiler on high, or grill to medium.

In small saucepan over low heat, or in a small microwave safe bowl, melt butter.

Place sweet corn in a medium-sized baking dish.

Broil sweet corn for 5-10 minutes, 4 inches from broiler, being sure to watch the whole time. Or grill for about 10 minutes, or until desired doneness.

After corn is done, baste with melted butter and garnish with fresh basil.

Serve warm.
