BBQ Chicken Quesadillas and Sweet Potato Fries

This past week has been so busy. With the start of the new year, there’s so many things we want to get done, so many resolutions to keep and so many new adventures to embark upon. We’ve spent the last week or so brainstorming new vacation spots to visit. It’s our New Year’s resolution to travel and enjoy more, especially the great outdoors. We’re almost done with out glamper camper, and we can’t wait to start taking it to every state park.
Because it’s been so busy, I haven’t had too much time to spend on dinner. I’ve been taking as many shortcuts as possible, while trying to make a meal the family will like. One of the go-to-‘s my family always loves is quesadillas. I can make them quickly and fill them with whatever I have on hand. I make them frequently as after-school snacks and pretty often for dinner too. It’s an easy meal that everyone loves.
For quick recipes like this, I like to keep NatureRaised Farms® Gluten Free Grilled Chicken Strips on hand in the freezer. These grilled chicken breast strips are perfect for quick recipes. BBQ Chicken Quesadillas and Sweet Potato Fries
Ingredients:
For the Quesadillas:
- NatureRaised Farms® Gluten Free Grilled Chicken Strips 12 oz.
- 1/2 cup BBQ sauce
- 2 cups shredded mozzerella (or dubliner) cheese
- 8 Flour tortillas
- vegetable or olive oil for cooking
For the Fresh Salsa:
- 1 cup Cherry tomatoes, cut in half
- 2 tablespoons chopped onion
- 3 tablespoons chopped bell peppers
- 2 tablespoons freshly chopped cilantro
- 2 teaspoons lime juice
- salt and pepper to taste
For Garnish:
- Guacamole
- Salsa
- Sour Cream
For the Fries:
- Alexia® Sweet Potato Fries
- Sea Salt
Directions:
For the Quesadillas:
Prepare NatureRaised Farms® Gluten Free Grilled Chicken Strips 12 oz. according to package directions. Combine with BBQ sauce in a small bowl and mix well.
Heat a large skillet over medium heat. Frizzle with olive oil and place a tortilla in pan. Top with BBQ chicken, shredded cheese and a top tortilla. Lightly brown on one side and then flip and brown quesadilla on the other side.
When quesadillas is golden brown and cheese has melted, remove from pan and slice.
For the Fresh Salsa:
Combine all ingredients in a medium bowl and mix well to combine.
For the Fries:
Bake according to package directions and garnish with sea salt.
To serve:
Serve quesadillas with fresh salsa, desired garnishes and sweet potato fries.
