Three Bean Salad
This is one of the quickest and easiest salads. Its my favorite quick fix salad for the summer. The canned beans in this recipe are part of my regular pantry stock, so all I have to do is get some fresh parsley to put this easy salad together. I recently found three bean salad in cans at my grocery store. Although, on my recent trip, they were nowhere to be found. Instead, I bought 2 cans of yellow wax beans and green beans, and 1 can of dark red kidney beans. You could also use any other type of beans you would like. You could use cannellini, chickpeas or black beans. Add different types and combinations of fresh ingredients too, like celery, green and red bell pepper, and tomatoes. Its a very versatile salad that’s also nutritious.
Yield: Serves 4
Three Bean Salad
Ingredients:
3 cans of 3 bean salad, or 2 cans yellow wax beans and greens beans and 1 can dark red kidney beans, rinsed and drained
1/2 sweet onion, diced
3 tablespoons fresh parsley
1/2 cup cider vinegar
2 tablespoons sugar, or more to taste
Salt and pepper to taste
Directions:
Rinse and drain beans in a strainer. Add all other ingredients to a large mixing bowl, and whisk to combine.
Add beans and let sit for at least 15 minutes before serving.
