Three Bean Salad

This is one of the quickest and easiest salads. Its my favorite quick fix salad for the summer. The canned beans in this recipe are part of my regular pantry stock, so all I have to do is get some fresh parsley to put this easy salad together. I recently found three bean salad in cans at my grocery store. Although, on my recent trip, they were nowhere to be found. Instead, I bought 2 cans of yellow wax beans and green beans, and 1 can of dark red kidney beans. You could also use any other type of beans you would like. You could use cannellini, chickpeas or black beans. Add different types and combinations of fresh ingredients too, like celery, green and red bell pepper, and tomatoes. Its a very versatile salad that’s also nutritious.

Three Bean Salad

3 cans of 3 bean salad, or 2 cans yellow wax beans and greens beans and 1 can dark red kidney beans, rinsed and drained
1/2 sweet onion, diced
3 tablespoons fresh parsley
1/2 cup cider vinegar
2 tablespoons sugar, or more to taste
Salt and pepper to taste


Rinse and drain beans in a strainer. Add all other ingredients to a large mixing bowl, and whisk to combine.

Add beans and let sit for at least 15 minutes before serving.

    Beans are so good for you…and they taste great! I use to not like them, but after becoming a vegetarian, they’ve become my best friends!

    my mom cans green and wax beans from her garden every summer and i’ll tell ya, this salad is our absolute favorite thing to do with them. we always add kidney beans too. 🙂

    This sure looks simple, healthy and delicious. I hardly use canned beans but it’s easy also to cook them in pressure cooker I think.

    I absolutely love and crave my 3 bean salad; however, I am prone to kidney stones and my dr. advised me not to eat beans because they tend to cause problems with kidney stone patients (have uric acid stones)….I was upset because I was making and eating this salad every week. Has anyone else heard about this?

      Hi Carole
      My husband is currently in school for doctorate of physical therapy, and while he is no expert, he has worked in nursing homes for over 10 years where people have this problem. Docs tell people to limit their intake of purine containing foods when they have bad cases of gout and also kidney stones. Some recent researchers think the bad purines only come from meat and not plant sources. If you love beans, I would definitely get a consult with a dietitian or another G.P. about diet changes. By the way, if you live in the south, most southerners are prone to kidney stones because of the heat, we’re more likely to be dehydrated, which causes stones, but everyone’s different.

    So simple and yet healthy and full of energy and nutrients. Great snack that you can put up in the morning before work and have for lunch or a couple of snacks to provide a healthy source of carbohydrate for energy.
