My favorite summer berry is blueberries. They are sweet and plump. Every time we go to the grocery store I get a few packs of them. Although we usually just eat fresh blueberries without anything for breakfast and snacks (our lab even stole a container of blueberries off the coffee table the other day), I occasionally like to bake with them.
Blueberry muffins are nice, but they take time, and I’m so lazy. So this morning I decided to make some blueberry bread. When I started I decided I’d toss in some of the over ripe bananas on the counter too.
Instead of using sugar in this recipe, I used a healthy shake recipe from ViSalus, their Vi-Shape nutritional shake mix. It has a beautiful sweet flavor that works well as a substitute for sugar. Plus it’s loaded with lots of vitamins and minerals – a perfect way to start your day.

Yield: Serves 6
3 over ripe bananas
1 egg
1 cup ViSalus Vi-Shape Nutritional Shake Mix Sweet Cream flavor (50 grams) (or 1 cup sugar)
1/2 cup milk
2 cups self-rising flour
1 teaspoon cinnamon
2 cups fresh blueberries
Heat oven to 350°. Mash bananas in a large bowl. Add egg and Vi-Shape Shake Mix and milk. Mix well to combine.
Add flour and cinnamon. Mix well to combine. Fold in blueberries and pour batter into a greased bread pan.
Bake bread for 50 - 60 minutes, or until deep golden brown and set.
