Cornmeal cake is something I’ve wanted to try for a long time. I figured since I love cornbread so much, then cornmeal cake is sure to be something that I also love.
I researched alot of recipes, and just came up with this one on my own. It’s a sort of walnut upside down cake with bourbon and brown sugar. For the cake, I added honey and vanilla.

After I baked my cake, I let it cool about 5 minutes before inverting it on my serving plate.

I was so amazed at how good this cake came out. It’s sweet, flavorful and just so good.
If you want this cake extra boozy, make a glaze with half melted butter and half bourbon with a few tablespoons powdered sugar to pour over top. If you need even more, make a bourbon cream by whipping 1 cup heavy cream, 1 tablespoon bourbon and 2 tablespoons powdered sugar until thick.

Yield: 8 servings
A sweet cornmeal cake with walnuts, brown sugar, vanilla and honey.
For the topping:
2 1/2 cups chopped walnuts
1/2 cup brown sugar
1/4 cup melted butter
1/4 cup bourbon
For the cake:
1 cup AP flour
3/4 cup yellow cornmeal
2 teaspoons baking powder
1/2 cup sugar
1/2 teaspoon salt
2 eggs
1 teaspoon vanilla
1/4 cup honey
1/2 cup melted butter
1 cup whole milk
Heat oven to 350°. Add all topping ingredients to a large bowl and mix well. Pour into a 10 inch round baking dish.
Add flour, cornmeal, baking powder , sugar and salt to a large bowl. Whisk well. Add eggs, vanilla, honey, melted butter and milk. Whisk until well combined and pour into baking pan.
Bake at 350° for 35 - 45 minutes, or until golden brown and fragrant.
Let cool 15 - 20 minutes before inverting on a serving patter.
