Bourbon Walnut Cornmeal Cake

Cornmeal cake is something I’ve wanted to try for a long time. I figured since I love cornbread so much, then cornmeal cake is sure to be something that I also love.

I researched alot of recipes, and just came up with this one on my own. It’s a sort of walnut upside down cake with bourbon and brown sugar. For the cake, I added honey and vanilla.

To bake my cornmeal cake,  I used this perfect slice baking pan from Demarle at Home. Demarle at Home is famous for the first introduction of flexible bakeware. Today Demarle at Home makes the ONLY flexible bakeware designed with the perfect combination of woven glass and food grade silicone, which is a must for unmolding and browning. These pans need no grease, oil, or cooking spray.

For best cooking results, the Perforated Baking Sheet shown below is recommended for baking with all Flexipan® Molds. You can see more of their products here. You can order online, or through your local representative. Want to learn even more about their products? Host a Demarle at Home cooking workshop and earn free products! After I baked my cake, I let it cool about 5 minutes before inverting it on my serving plate.

Demarle at Home’s flexible baking pan just comes right off.

And here’s the cornmeal cake topped with walnuts, brown sugar and bourbon.

I was so amazed at how good this cake came out. It’s sweet, flavorful and just so good.

If you want this cake extra boozy, make a glaze with half melted butter and half bourbon with a few tablespoons powdered sugar to pour over top. If you need even more, make a bourbon cream by whipping 1 cup heavy cream, 1 tablespoon bourbon and 2 tablespoons powdered sugar until thick.
