Brown Butter Oatmeal Chocolate Chip Cookies

I’ve just recently been introduced to browned butter, and it’s changed my life. Now browned butter isn’t anything complicated like I thought it was, it’s simply butter that’s been browned on the stovetop, without burning it. Then you simply use it in any recipe that calls for softened or room temperature butter. It’s pretty easy, so long as you don’t burn the butter.

Here, I’ve used Land O’Lakes (unsalted) butter and browned it before adding it to a chocolate chip oatmeal cookie recipe. This recipe is based on the famous Nestle Toll House recipe. It cooks up perfect every time, just be sure for best results to refrigerate the dough before baking the cookies to get nice fat cookies, and not flat ones.

Brown Butter Oatmeal Chocolate Chip Cookies

Cook Time:   10 minutes    Total Time:   1 hour 45 minutes

Ingredients:

2 sticks butter
1 1/2 cups brown sugar
2 eggs
1 1/4 cups AP flour
1 teaspoon baking soda
1 teaspoon salt
1 cup oatmeal
1 1/2 cups chocolate chips
1/2 cup chopped pecans

Directions:

Heat oven to 375°. Heat butter over medium low heat in a small saucepan until browned. Be careful not to burn. Butter is done when browned and when it has a rich, nutty aroma.

Let butter cool to room temperature. Add butter and sugar to stand mixer. Mix until well combined. Add eggs and mix well. Add flour, baking soda and salt. Mix until well combined. Add oatmeal, chocolate chips and pecans. Mix until just combined.

Refrigerate dough until chilled, about 1 hour.

Spoon dough by the tablespoon onto a parchment lined cookie sheet. Bake for 10 minutes at 375°. Let rest for 3 minutes on cookie sheet after baking. Remove and cool on cooling rack. Store leftover cookies in an airtight container.
