I have recently become a little obsessed with pudding cookies. I just love them because they always come out soft, perfect and full of flavor. So before Christmas I wanted to make a few more varieties to share with my friends and family. This new butterscotch pudding cookie is my latest and favorite. They are packed full of butterscotch flavor with both butterscotch chips and butterscotch pudding mix.
I adored butterscotch pudding as a kid, even more than chocolate pudding, so I knew butterscotch pudding cookies would quickly become one of my new favorite cookies. If you can’t find butterscotch chips, or don’t have any around the house, you could also add milk or white chocolate, or maybe even some different nuts. I like to stick to the butterscotch overload though, so I just used lots of butterscotch chips.
Yield: 36 cookies
1 cup butter, 2 sticks
1 cup sugar
1 (3.9 oz) box instant butterscotch pudding
2 eggs
1 teaspoon vanilla extract
2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups butterscotch chips
Heat oven to 350°. Cream butter and sugar together. Add eggs and mix well. Add vanilla and butterscotch pudding mix. Mix well. Sift flour, baking soda and salt together. Add to cookie dough and mix until just combined. Scrape down sides of mixing bowl and mix again. Add butterscotch chips and mix until combined.
Chill cookie dough in the refrigerator about 1 hour, enough that it is pretty firm. Scoop by the tablespoon on a parchment paper lined cookie sheet. Bake for 10 - 12 minutes, or until very lightly browned on the edges, Cool on cookie sheet 2 minutes before transferring to a wire cooling rack.
