Caprese Meatballs

My absolute favorite ingredient in the frozen food isle has got to be the meatballs. They are so convenient and versatile. I’ve tried lots of different brands, and I can’t say I have a favorite, but I haven’t found one I didn’t like either. I can use them to quickly make a spaghetti and meatball dinner for my family, make a meatball sub, and even make some fun and easy appetizers like these little caprese meatballs.

This is one of my go-to easy entertaining recipes for hungry guests. Remember how hungry you were the last time you had or went to a backyard BBQ. Having to smell all those delicious grill flavors and just sit around and wait, Oh the agony! Well no more, next time make some hearty appetizers like these meatballs instead of just a veggie platter or a big salad.  Your guests will certainly thank you!

And did I mention how easy these appetizers are? It’s just 4 ingredients! When I entertain I love to make super simple recipes like this from memory, that way I can spend the rest of my brain power on the one thing I love more than cooking, and that’s talking. You may not be using  your grandma’s secret meatball recipe, but I doubt your hungry guests will ever notice.

These little appetizers meatballs are just those fully cooked pre-packaged meatballs from your grocer’s freezer. I heated them by baking them in the oven per package directions. Then I served them on a skewer with a fresh basil and a mozzarella pearl in a puddle of marinara.

Yield: Serves 4

Caprese Meatballs

Ingredients:

36 fully cooked meatballs (from frozen and cooked per package directions)
36 basil leaves
36 mozzarella pearls
1 jar your favorite (or homemade) marinara sauce
36 toothpicks

Directions:

Heat meatballs according to package directions. Heat marinara sauce too.

Assemble heated meatballs, basil leaf and mozzarella pearl on a toothpick. Spoon marinara sauce on small or large appetizer plates. Then assemble meatballs in the sauce.
