Chicken and Apple Quesadillas
These are super easy, kid-friendly quesadillas that the grown-ups will love too. I made these last night to go along with my apple pumpkin soup. These quesadillas have delicious apples, I used red delicious, crisp celery, and seasoned chicken. I seasoned the chicken with just ordinary poultry seasoning. It was very easy. The poultry seasoning contains great flavors for fall like sage, thyme, rosemary, and a hint of nutmeg. I used mozzerella in my quesadillas, but you can use any cheese you like.
Pumpkin week is coming to an end at the Family Kitchen, and I have 2 more pumpkin recipes for you this week. Last week, I had bought plenty of pumpkin to get me through all my recipes, but had to use some of my pumpkin in an unexpected way. My now 6 month old puppy, Coco, had a very upset stomach from stealing some leftover pierogi dough off the counter while I was cooking. The dough was filled with sour cream, and it seems he’s severely lactose intolerant. I fed him plenty of pumpkin, and he feels better, but I’m out of pumpkin. Rather than buy more canned pumpkin, we went to the pumpkin patch at the local church early this year. I forgot my good camera, and snapped this shot with my iphone just before my battery went dead.
When we got out of the car, he ran right for this pumpkin and brought it to me. I guess he knew what he wanted. We got a couple of other small ones before leaving. Yes he has on shorts and a t-shirt, it is still really hot here in Florida.. We’ll definitely be going back closer to Halloween to get that big pumpkin to carve, and hopefully get some better photos!
Yield: Serves 8
Chicken and Apple Quesadillas
Ingredients:
2 boneless, skinless chicken breasts, sliced
1 teaspoon poultry seasoning
1/2 teaspoon salt
1/2 teaspoon pepper
olive oil
2 apples of your choice, thinly sliced
4 stalks celery, sliced
8 large flour tortillas
1 cup mozzarella cheese
Directions:
Season sliced chicken breasts. Preheat large skillet. Drizzle with olive oil. Add chicken and brown.
Preheat oven to 450 degrees. Use 2 large cookie sheets for quesadillas. Lightly oil one side of the tortilla. Place tortilla, oiled side down on cookie sheet. Add cooked chicken, apple slices, celery, and cheese to tortillas. Lightly oil another tortilla and place this tortilla, oiled side up on top of your quesadilla.
Bake quesadillas until golden brown and crispy.
