Chicken Ranch Naan Pizzas

It’s a new year, and time for some resolutions. Time to get healthier, lose some excess weight, and start being more active as a family. I shared a few weeks ago, that I started losing some weight before Christmas, and actually managed to maintain (although I didn’t lose anymore) through Christmas, New Years and a BBQ filled NC family vacation.

This week, I want to get back on track, counting calories and continuing exercising. But to keep my calories in check, I’ve had to re-invent some of our family favorite dinners, like pizza. I’ve tried pita bread, flatbread and now naan to make pizzas more healthy, and I have to say that I like the naan bread the best.

To make these pizzas, I used one of my favorite pizza condiments (ranch dressing) and used it as a sauce. To save more calories, use a very light spread of ranch, and use Hidden Valley’s Low Fat Version. The ranch dressing adds a ton of flavor. For toppings, I used grilled chicken, tomatoes and green onions with a little mozzarella cheese. These are super simple and also make the perfect individual portion size.

Chicken Ranch Naan Pizzas

Ingredients:

½ cup diced green onions
½ cup Hidden Valley® Original Ranch® Dressing
1 cup low fat, shredded mozzarella cheese
2 cups sliced, grilled chicken breast
2 Roma tomatoes sliced thinly
2 tablespoons freshly chopped Italian parsley
4 pieces naan flatbread (garlic or whole wheat, around 4 ounces each)

Directions:

Preheat the oven to 400 degrees F.

Spread 2 tablespoons ranch dressing over each piece of naan bread. Add ½ cup sliced chicken breast to each pizza and sprinkle each with ¼ cup mozzarella cheese. Divide sliced tomatoes over each pizza.

Bake for 10 – 12 minutes, or until golden brown and cheese has melted. After pizzas are removed from oven, sprinkle with green onions and Italian parsley.
