A few weeks ago, when my son and I were shopping at Marshals’, he spotted popsicle makers. I’ve had popsicle molds before, but I had never seen the little makers. The one we picked out is made by Zoku. It’s pretty cool. You just freeze the little popsicle maker and then make popsicles in just a matter of minutes. It’s perfect for little ones with no patience.
I’ve been making all kinds of simple juice pops, but today I wanted to try something rich and chocolatey, so I made some pudding pops. For these pops, I simply made some instant chocolate pudding with almond milk and a little International Delight Coffee Creamer for added flavor. They came out amazing and were the perfect treat for a hot summer day.

In addition to adding International Delight coffee creamer to my coffee, it also makes one amazing popsicle. There’s four flavors to choose from, Toasted Hazelnut, Chocolate Almond Biscotti, Caramel Marshmallow and Caramel Creme. Yield: Serves 1
1 (3.9 oz) package instant chocolate pudding
1 3/4 cup milk
1/4 cup International Delight Chocolate Almond Biscotti Coffee Creamer
Prepare pudding as directed, substituting 1/4 cup of the milk for the coffee creamer.
Pour into popsicle maker or small paper cups. Insert popsicle stick and freeze!
