Chocolate cobbler is one of the easiest to make and most decadent chocolate desserts. It is a super moist chocolate cake like brownie floating on top of rich hot chocolate sauce. It is the perfect dessert with homemade vanilla ice cream. And did I mention it was low fat! It only has 2 tablespoons of oil in the whole dessert. I have had this dessert as a child at church functions, but had forgotten about it till recently. I just reminded of this recipe again by a friend. I soon remembered that wonderful treat from my childhood that I had had just a few times, but had never made. When I started researching recipes, I realized what a low fat wonderful dessert this is. Here is a simple recipe of how to make chocolate cobbler.
Yield: Serves 4
1 cup all purpose flour
1 teaspoon baking powder
1/2 teaspoon kosher salt
3 tablespoons cocoa powder
1 cup milk
2 tablespoons olive or vegetable oil
3/4 cup sugar
1 teaspoon vanilla
1 cup roasted nuts (optional)
Topping:
1/4 cup cocoa powder
3/4 cup brown sugar
1 3/4 cup hot water
Preheat oven to 350 degrees.
Sift together flour, baking powder, cocoa, and salt in a large mixing bowl. Add sugar and mix. Add vegetable oil, milk, and vanilla. Mix until well incorporated, but do not over-mix. Add roasted nuts if using.
Spray 8x8 baking pan with non-stick spray. Pour mixture into baking pan.
Add topping ingredients, just sugar and cocoa to a mixing bowl, and mix well. Sprinkle on top of batter.
Then take the hot water, from tap, and very, very slowly pour on top of everything, making sure that all topping sugar is wet.
Bake in a 350 degree oven for 45 minutes.
