Cinnamon roasted almonds are one of my favorite treats, not only for the holidays, but also anytime of the year. I use to buy them at the grocery store and pay quite a lot for them, that is until I figured how ridiculously easy they were to make. And another benefit to making them at home is they make your house smell amazing.
This recipe was developed for Babble’s Family Kitchen.
Yield: Serves 4
2 cups Almonds
1 egg white
1 tablespoon water
1/4 cup sugar
1/4 cup dark brown sugar
1/4 teaspoon kosher salt
1 teaspoon roasted cinnamon, or regular cinnamon
1 teaspoon vanilla extract
1. Preheat oven to 250 degrees. Add egg white and water to a large bowl. Beat egg white until you have soft peaks. Add sugars, salt, cinnamon, and vanilla extract. Mix well. Spread nuts in a single layer on cookie sheet lined with parchment paper.
2. Bake at 250 degrees for 1 hour, stirring almonds once, halfway through cooking.
